Wine tasting :
Deep purple colour. Coffee-mocha aroma, the oak evident, but also rich, ripe fruit behind. The coffee-caramel oak effect is still very present, but there’s a depth and volume of fruit as well. Opulent and seductive in a modern and full-on way. Tannins are present, but refined.
The marriage of dishes and wines :
With a game bird or a game animal with ancient vegetables, this wine will be the perfect companion.
Feature :
Very complex wine, this special reserve is unusual by the aromatic intensity of very ripe black fruits and spices (liquorice, cloves). A full-bodied attack leaves the place quickly to gentle tannins, a warm flesh, aromas infiltrated of blackcurrant and blueberry with overtone of thyme. The final is grandiose.
Type of soil :
Clayey - calcareous soil and rolled pebbles.
Grape varieties / age : Grenache 1/3 (130 years) - Mourvèdre 1/3 (100 years) - Syrah 1/3 (80 years)
Wine making and maturing :
Grapes are sorted and picked by hand, maceration from 25 to 30 days, with the control of temperatures, de-stalking, regular release and treading, maturing in new barrels for 18 months before the conditioning in bottles.
Development:
Can be tasted from now, will reach its maturity in a few years
