Thomas Pico, installed in Courgis, was working his family land (from the Bois of Yver) since 2005 when he began a conversion to organic farming. No great wines or famous terroirs, but a will to do well and to respect the terroir so often flouted. The size of its operations allows him to work its vineyards almost alone. His Chablis are the gustable fairly young (between two and seven years), in the glow of their generous fruit.
