The Allegory 2019 cuvée from Domaine des Closiers comes from plots of Chenin blanc located in the place called “Les Gorys”, on the clay-limestone slopes of Parnay, in the heart of the Saumur Champigny appellation.
Description
Although an allegory is an abstract idea, this cuvée perfectly and concretely represents the complexity and finesse of Loire white wines.
The grapes are harvested manually then pressed before being sung in Burgundy rooms for fermentation. This is followed by an aging of about ten months with 3 different types of wood which allow to reach the finest and most complex aromatic expression possible, all in balance.
