Description
Michel Sajous, the owner, built this distillery exactly where the old family business stood. He cultivates his varieties of sugar cane organically on 30ha.
This Clairin Sajous white rum is produced from the "Crystalline" cane variety, one of the best old varieties, which is now found only in Haiti. Unprocessed, the sugar cane is picked by hand and pressed by small mills. After a fermentation phase with wild yeasts, this pure cane juice is distilled in Pot Still, heated over an open flame, then bottled at 55.9%.
With a high aromatic richness, this rum has a unique personality and is rare outside the island of Haiti.
