The olives of the Iblei Mountains (southeaster Sicily) are the raw material of Rinascita Barocca. The olive trees of the Olive Alive Estate are located on a hill not far from Noto. Many of them are more than a century old. The cultivars of this blended oil, among the best of South-Eastern Sicily, are the Tonda Iblea, the Biancolilla and the Moresca. The beating of the plants takes place between mid-September and mid-October. On the same day of olive picking, the olives are pressed using the cold pressing process, which ensures the quality of extra virgin olive oil. The oil is stored in silos containing nitrogen in order to preserve the aroma and the organoleptic qualities. This technical method prevents contact with oxygen and therefore limits the oxidation process the main cause of acidity. The Barocca Rinascita oil in raw is excellent for season salads or for spring and summer dishes. It exudes a very fresh scent with clear notes of green tomato and freshly mown wet grass. The taste is moderately fruity with persistent notes of fresh tomatoes and other vegetables.
